About the role

  • Responsable de production en restauration pour la Fondation ILDYS à Roscoff, gérant une équipe de 15 personnes et une production de 160 repas.

Responsibilities

  • Responsible for production (catering) using cook-chill / cold-chain operations (160 plated meals at lunch and dinner + self-service lunch ~200 covers)
  • Manage a team of 15 (schedule monitoring, organization, annual reviews, recruitment)
  • Ordering (food and non-food) (FTBE software currently being updated)
  • Organize production (cook-chill / cold-chain)
  • Manage regulatory approval files (HACCP, Sanitary Management Plan - PMS)

Requirements

  • Bac +2 level (two-year post-secondary diploma) or strong experience in collective catering (foodservice, sanitary focus)
  • Proficient in HACCP and hygiene package (management of approval dossier)
  • Expertise in cook-chill / cold-chain production
  • Stock management (FTBE software)
  • Good culinary knowledge (pureed textures, therapeutic/special diets, etc.)
